Andrés is driven to push boundaries in processing, constantly exploring ways to bring out the best in every bean.
This standout lot undergoes a 96-hour fermentation in cherry, enhanced with sugar cane honey to elevate sweetness to 15%. It’s then gently dried in a silo to preserve its complexity. The result is a beautifully balanced cup with layered notes of blueberry, black currant, and dark chocolate—a testament to Andrés’ commitment to crafting coffees that are both expressive and unforgettable.
